Ped vs Ped_default
What is the difference between the ped and ped_default adaptations? Does the default part have something to do with it being the one that the ped spawns with when you spawn in the ped?

"Ped" has 2 uv channels (don't know what exactly the second UV channel is used for, as all texture layers seems to use uv#1). "Ped_default" has only 1 UV channel in vertices.

nope, I don't see any difference, advantage or disadvantage of using any of these two.
