Hello, how can I rig the various soft top parts of a convertible car to make them move without being detached?

The model should be import with "Slice to parts" turned off. Once you do this, the model will be loaded as single .mesh object rigged to a skeleton, parts will not get detached.

then assign weight of bones onto the mesh. note, vehicle can have only one bone affection on a vertex, so can't soft-rig with multiple bones. Bones assignment can be found in peds rigging videos. In general, you should set bone as a "Current bone" and use Rigging\Influence\Paint tool on vertices to assign this bone onto desired vertices.
