Need help with rigging a dog mesh to chop.

So I have a new German Shepherd model I want to put in the game but I can't figure out how to connect the mesh to the bones.

in general, this is very alike to player/npc models replacement. however, animals might have collision objects assigned on skeleton bones (you might see them after importing original model). collisions merged into skeleton are not supported yet. you can remove them and export a model, but it will die at very first collide with any other object.
