what ist the "Default Material" good for and why can't it be deleted?

This is a material with index zero. Any new object or geometry you create in ZModeler gets material with index 0 assigned. In general, it is preferable to keep it in materials editor, but do not use it in your scene explicitly. So, all of your geometry should use different materials, other than Default Material. Also, if we are talking about GTA modding, a collision geometry object will use 0-index material (Default Material) on them, so it might be essential to keep this material to see your collision objects in a proper way. Otherwise, collisions might pick a different material and appear in 3D/perspective with some textures on them that are not a good choice.
If you get an error on export "Can not obtain shader material from Default Material", then some of geometries on export are found to be using Default material. You can use several methods to locate a problematic object(s). First of all, when object(s) are switch to polygons level, you can use "Select->By Material" tool to select "Default Material" polygons. Second, when materials browser is shown (or minimized), you can select object(s) in scene and inspect "Scene Selection" in Materials browser to see whether selection uses "Default Material" or not. In both cases you can change material assignment on those that uses "Default material" using Drag&Drop in Materials browser onto "Default Material" row of "Scene Selection".
